🍫 The Dangers of a Prolonged High Phosphorus Diet 🥤
Many packaged and processed foods contain phosphorus & phosphoric acid. Inorganic phosphorus is very easily absorbed in the gut, especially compared to natural phosphorus from animal & plant foods. Yet it's not required by law for phosphorus to be listed on nutritional labels in the U.S.

The human body is always working to maintain a balance of phosphorus and calcium. Healthy kidneys remove extra phosphorus from the blood. However, high phosphorus levels in the blood can lead to bone, joint & cardiovascular problems in people with kidney disease or kidney damage. High dietary phosphorus intake (in excess of the RDA of 700 mg/day for adults) is also associated with an increased risk of all-cause mortality in healthy adults.

🍕The High-Protein Western Diet is an Acidogenic Diet 🍔
Many nutritionists believe that a diet low in alkaline fruits and vegetables and high in acidic animal products is more likely to lead to conditions like diabetes, hypertension, and nonalcoholic fatty liver disease.

As we age, kidney function declines. Some theorize that the kidneys’ ability to excrete acid & prevent acid retention in the body also declines as we age. For some people, eating an acidogenic diet (high in animal protein and low in plant-based foods) could then lead to a very low-grade state of metabolic acidosis, a condition where there is too much acid in the blood.

If the kidneys and lungs can’t keep your body’s pH in balance, this can lead to metabolic problems. Very high protein diets have been known to lead to metabolic acidosis in rare cases.

Animal protein (including meat, eggs & cheese) is the largest source of dietary acid. Fruits & vegetables, on the other hand, are high in organic anions like citrate that get converted to bicarbonate - a base that neutralizes acid.
Isothiocyanates are dietary phytochemicals that ha Isothiocyanates are dietary phytochemicals that have anticarcinogenic, neuroprotective, antidiabetic, cardioprotective, and antimicrobial effects. Many isothiocyanates display anticarcinogenic activity because they block the activation of carcinogens and increase the detoxification of carcinogens.

Cruciferous vegetables (including broccoli, brussels sprouts, cauliflower, watercress, kale, bok choy & cabbage) are rich sources of compounds called glucosinolates which are precursors of isothiocyanates.

Research suggests that resistance of cancer stem cells to conventional therapies like chemotherapy and radiotherapy is a major cause of disease recurrence. Specific dietary isothiocyanates that have been studied for their potential to inhibit cancer stem cell self-renewal include:
🥗 Phenylethyl isothiocyanate (PEITC) - found in watercress, broccoli & radish, PEITC may target therapy-resistant CSCs in cervical cancer
🥦 Sulforaphane - a compound found in broccoli & broccoli sprouts that has been found to inhibit self-renewal of breast cancer stem cells
🍈 Benzyl isothiocyanate (BITC) - may inhibit breast cancer stem cell growth; the glucosinolate precursor of BITC is found in papaya seed extracts

Eating raw or lightly cooked cruciferous vegetables is a great way to reap the antioxidant benefits of isothiocyanate compounds. Stir-frying or steaming increases the yield of isothiocyanates from cruciferous veggies like cauliflower & kale. Boiling & baking, on the other hand, can substantially reduce or destroy isothiocyanates.

Note: people with thyroid problems may need to limit their consumption of cruciferous vegetables.

Both are in season during the fall. 🍂 And both fruits are good sources of ursolic acid, a phytochemical that has anticancer and antitumor effects.

Ursolic acid is a bioactive compound present in the fruit peel/waxy layer of apples, cranberries, pears & plums. Herbs like rosemary, holy basil, sage, oregano, thyme & lavender are other natural sources of ursolic acid.

A growing body of research indicates that ursolic acid inhibits cell growth, metastasis, and tumorigenesis in various cancers.

Some research indicates that ursolic acid may inhibit breast cancer stem-like cells and reverse the chemoresistance of breast cancer cells to drugs like Paclitaxel. Ursolic acid may also have the potential to inhibit proliferation and reverse drug resistance of ovarian cancer stem cells.
 
Clinical research into the use of isolated ursolic acid (in combination with other phytochemicals like Resveratrol and/or cancer drugs/treatments) to treat various types of cancers is ongoing.
